In the center of Grillby is a small artisan food company that produces Sweden's only bread with a protected designation of origin - Upplandskubb. Magnus Berneklint is both baker and unofficial ambassador for this unique bread. Upplandskubb is dense and moist, with a sweet and sour undertone that makes it especially good when sliced thinly and served with a salty topping like aged cheese or ham.<\/p>\n\n\n\n

There are several factors that make this tasty bread unique. A number of requirements must be met in order for the bread to be sold under the name Upplandskubb. In addition to the fact that Upplandskubb, as the name suggests, must be cooked in Uppland, there is a step in the production process that differs from all other bread baking. It is never baked in the oven but is baked by boiling in a water bath on the stove. The ingredients of the bread - rye and wheat flour - must also be milled at a mill in Uppland from grain grown in the region. <\/p>\n\n\n\n

Upplandskubbkokeriet meets all the requirements and is therefore allowed to sell genuine Upplandskubb labeled with a protected designation of origin, in addition, the bread is one of Sweden's intangible cultural heritage since 2025.<\/p>\n\n\n\n

Outside the bakery is an unmanned Kubbomat where you can buy Upplandskubb on weekends. You can also pick up pre-ordered Upplandskubb at the Kubbomat every day of the week. It is also possible to order the bread for delivery by parcel post or pick it up via the REKO ring in Enk\u00f6ping. Orders can be placed on the company website.<\/p>\n\n\n\n

For those who want to know more, Upplandskubbkokeriet offers courses and lectures on Upplandskubb, baking tradition and food history, aimed at both individuals and professionals in the food and hospitality industry. From time to time, pop-up (experiences) are created where Upplandskubben is put into different gastronomic contexts with a focus on local ingredients, taste and craftsmanship.<\/p>\n\n\n\n
