Welcome to a genuine pasta course in the spirit of Emilia Romagna!
Are you eager to master the enchanted world of authentic Italian pasta? The one that really means delicious food culture - as far away as possible from everyday fast food macaroni. Here at Herresta Lada, we have another opportunity to experience the cooking skills of Parma-born chef Lorenzo Biacchi.
In one afternoon you will learn how to make pasta with eggs from scratch and create different classic pasta shapes such as tagliatelle, maltagliati and stuffed tortelli d'erbetta. All this takes place in a relaxing environment at Herresta Lada, our charming 19th century farmhouse with a fantastic atmosphere.
You could say that Emilia Romagna is a bit like Italy's food mecca. It's home to products like Parmigiano Reggiano, Prosciutto di Parma, Balsamico di Modena and the dish bolognese, named after the city of Bologna. It's also home to the Ferrari and Lamborghini sports cars - although we won't be switching to fast food on this day!
This is how the course is structured
- Welcome drink and mingle - We start by getting to know each other over a glass of Italian sparkling wine.
- Introduction - A brief overview of different flours, types of pasta and smart tips and tricks to succeed in the whole process of making pasta.
- Kneading and shaping our own pasta - We roll and shape tagliatelle, maltagliati and tortelli d'erbetta, step by step.
- Cooking pasta and different sauces - Together we will cook traditional bolognese sauce, a vegetarian mushroom sauce and the classic filling for tortelli d'erbetta.
- We eat dinner together - To round off the evening, we enjoy our homemade pasta and a good dinner together in the cozy environment of the farm.
You will also have the opportunity to ask all your questions to the chef and perhaps share both positive and negative experiences of your past life with pasta.
Everything needed for cooking is included in the course fee, such as all ingredients, cooking tools, etc.
All you need to bring is your own apron, comfortable slippers and a notebook.

- Understand how long and in what way the pasta dough should be processed for best results
- Get practical tips and tricks to avoid common mistakes

- Get recipes with instructions for everything we've cooked
- Enjoyed good food and drink in good company and pleasant surroundings

Price and registration
The number of participants is maximized to 18 people. If you want a ride from and to Märsta station, we can offer it for SEK 100 / person.

Lorenzo comes from Parma and has been working with Italian delicacies and cooking in several countries for more than 5 years. He loves to highlight his local food traditions and food quality in the places he works.
