Enjoy the Christmas table at Wik Castle for a few hours. We suggest you try the Christmas table classic tours and enjoy the delicacies in a special order:
Mulled wine and raisins
Warm mulled wine with almonds and raisins is served with gingerbread and noble cheese in the castle's lounge. A nice start to the meal that allows calm to settle in and we prepare for a good meal.
Herring table, first round
All the tasty herring fillings have been made with care. Wik's 2024 herring is flavored with apple, star anise, cinnamon and Szechuan pepper. Enjoy all herrings with potatoes, crispbread, cheese and butter. The vegan option includes Matjes portabello, Brantevik eggplant and marinated mushrooms. We recommend drinking Mellerud's Prima Christmas beer and schnapps with it. We have all the Swedish classics for this round of the Christmas table.
Cold and smoked fish, second round
The next serving of the Christmas table continues with cold and hot smoked and gravlax. Here you will also find seafood terrine with trout roe, hunter's smoked mackerel and Wik's mess with crayfish tails flavored with dill egg and chives. The vegan dishes on the Christmas table include roasted and oven-baked parsnips in mustard sauce, beetroot with currants and mint, and engraved carrot with tarragon and dill. We recommend 2022 875M, Chardonnay, Rioja, Spain (for heavier fish, such as smoked salmon) and 2022 Even & Odd Riesling, Rheingau, Germany (for lighter fish, such as seafood stir-fry).
Cold-cut meats, third round
Cold cuts include charcuterie from local producers. We serve lamb, veal jam, turkey breast deer and Wiks chicken terrine. As a side dish, we serve pickled vegetables from our own farms, mixed salads and carefully handled chanterelles. The Christmas ham is the crowning glory, our own mustard flavored with apple. Vegan delicacies on the table are baked celeriac with mustard and tarragon vinaigrette, Waldorf salad and green and black cabbage salad. For this round, we recommend drinking 2023 Secret de Lunes Pinot Noir, Languedoc-Rousillon, France (Organic)
Lutfisk
The lutefisk is served directly at the table. Order it from the serving staff. The lutefisk is classically prepared and served with boiled potatoes, béchamel sauce, green peas and allspice. Feel free to drink Wisby Lager or 2023 Secret de Lunes Chardonnay, Languedoc-Rousillon, France (Organic) with the Lutfisk.
Slightly warm, fourth round
On the hot table you will enjoy delicate meatballs, classics such as Jansson's temptation, omelette with creamy mushroom stew, finely handled cabbage, hot vegetables, orange glazed pork side, black pudding with bacon jam onion apple from the farm as well as red wine sauce and prince sausage. The vegan hot consists of Chickpea croquettes with cumin and fennel, sliced fried red cabbage with syrup and blood orange, Brussels sprouts with curry onions and sultanas. To these dishes you drink Melleruds Prima Christmas beer and schnapps, we have all the Swedish classics. Alternatively, 2020 Chianti Classico Valiano DOCG, Tuscany, Italy.
Cheeses and bread, fifth round
Cheeses from Skogsbacken's dairy, very tasty cheeses both hard cheese and delicious dessert cheeses await as well as the good bread and crispy biscuits, homemade marmalade with the taste of currant, raspberry and strawberry. To this you drink a real classic, Grådask Tawny Port.
Pastries and cakes, sixth and seventh rounds
The large sweets cupboard is filled to the brim with goodies produced by our chefs. Here you will find everything from rice Ala Malta with juice sauce, cheesecake with raspberry jam, soft cheesecake with cloudberries and gingerbread several different kinds of desserts. There are also sweets and toffees of various kinds, traditional crackers and ice-chocolate, cut fruit and strudels. We recommend drinking a good cognac and coffee with it.
Alcohol-free alternatives
For all the tours we have nice non-alcoholic alternatives such as our own apple cider or an aged Christmas cider.
