The secret of the perfect pizza dough - An exclusive pizza baking course
Making a good pizza is not an art, you might think? But from different experiences of trying, we may have experienced that it is not as easy to get that perfect pizza creation as in the fine restaurant, one that both feels, tastes and looks fantastic.
Now you have the opportunity to learn under professional guidance to create the most delicious of pizzas. And anyone can learn to be a proud pizza maker with these simple but clever tricks. With the help of Italian chef Lorenzo Biacchi, we will learn several crucial Italian secrets behind the creation of the perfect pizzas. The course includes the following:
- Creating the perfect foundation in the form of different ingredients and work steps to produce the sourdough. A dough that is crispy on the outside, yet soft and airy on the inside, and where you can taste the dough
- Making your own delicious yet simple tomato sauce
- Trying different combinations of delicious toppings - in the right amounts
- Working with different focuses such as nutrients, sourdough options, temperatures, fermentation processes and balances between different ingredients
- Understanding the cooking process while in the oven
- Enjoying a variety of pizzas together, in a friendly atmosphere
Everything needed for the course and cooking is included, such as all ingredients, cooking tools, etc. You need to bring your own apron and notebook. If you want something other than table water for the tasting, there will be Italian beer and wine or soft drinks and mineral water available for purchase.
With the foundation and experience you will gain from the course and the course leaders, you will also find it easier to dare to experiment more with different flours, toppings, spices, etc. You will of course take home recipes for sourdough and tomato sauce as well as suggestions for different good combinations of toppings.

When
The course will be held on Sunday, March 15 between 15.00-19.00, where the first 2 hours are about the cooking processes. The last 2 hours will be spent tasting, asking questions and socializing together. Here you have the opportunity to ask all your questions to the chefs and share both positive and negative experiences with your pizza baking.
Where
The course is held at our charming course farm Herresta Lada, 4 km north of Märsta station. Taxi or pick-up can be booked from the station.
Price and registration
The price of the course is 1 095 SEK/person. Registration is done by email to and confirmation by payment of the course fee to Swish 0702011430 (Tord Olsson).
The maximum number of participants is 15. Last time, this popular course was overbooked.

Lorenzo comes from Parma and has been working with Italian delicacies and cooking in several countries for more than 10 years. He loves to highlight his local food traditions and food quality in the places he works.
